Tipperary The Rising 11 Year Whiskey Bottle no 3,
a single malt aged and distilled in a Boutique Distillery in Clonmel, Co. Tipperary. Only 1916 bottles have been produced and each bottle is individually numbered, this being the third bottle ever produced. Aged to perfection in Oak Casks.
Tipperary Boutique Distillery was created to distil a unique Irish whiskey from their own barley, grown on Ballindoney farm in County Tipperary.
The stills are not yet built, however their first expression (Tipperary The Rising 11 Year Whiskey), was released in March 2016. They searched Ireland for a mature whiskey which would reflect the style of the spirit they will make in Tipperary, and they specifically selected these casks to bottle and release their inaugural expression. Their own spirit will have to be aged in wood for at least three years and a day before it can be called “whiskey”. Luckily, after 200 years of watching their barley ripen for harvest each year, patience is something they have in abundance at Ballindoney farm. Wait with them, put your feet up, and have a dram of the Rising while you wait.
