Waterford Single Farm Origin Ballykilcavan Irish Single Malt Whisky

(Edition 1.1) was distilled in 2016 from Taberna barley grown by David Walsh-Kemmis west of the River Barrow in Co. Laois in the barley heartlands, where his fertile fields are sheltered by ancient woodland. David is the thirteenth generation since 1639 to farm at Ballykilcavan. Released from the much anticipated Waterford Distillery. Introducing the concept of Terroir to Irish whisky the team in Waterford are developing the thought that the main ingredient of Irish Whisky, the Barley, shapes the distinctive flavour profile of their whiskey.
Using 100% demonstrably Irish-grown barley, widely considered to be the world’s finest, the new Single Farm Origin series is an uber-provenance range of limited edition natural whiskies that explore Irish terroir one farm, once place, at a time. They are expressions of precision and rarity. Following a strict methodology that originates in the greatest vineyards of France, each farm’s crop is kept separate from field to barrel.
Using a mash filter instead of a mash tun, super-long 120-hour fermentations, and exceptionally slow distillations, they produce the most natural and respectful expressions of barley possible.

Each individual farm that has supplied the distillery will feature in a distinct whisky that bears it’s name.

After maturing in an alluring combination of exceptional French and American oak – all of which are first use only for whisky – each Single Farm Origin whisky is bottled at 50% ABV without colouring, chill-filtration or any additives. Totally natural.

WATERFORD DISTILLERY IS A MAJOR NEW WHISKY PROJECT
Waterford was chosen, on the banks of the river Suir, on Ireland’s sunny south-eastern coast, where an exceptional state-of-the-art facility originally built by Diageo in 2004 was converted to distilling in 2015. And there are the finest quality raw materials: the purest of spring water from renowned ancient wells; a team of passionate distillers that share the vision; and the very best barley in the world.
The provenance of the barley, where and how it is cultivated, is therefore key. Taking proven principles from Islay a giant step further, sourced from an unprecedented 72 Irish farms, including organic and biodynamically run, growing barley on 19 distinct soil types. With a pioneering digital logistical system keeping track, each farmer’s crop is harvested, stored, malted and distilled separately. Thus captured in spirit each farm’s terroir, that subtle character shaped by micro-climate and soil. Individuality and integrity from field to barrel.
The goal of this precision, provenance with total traceability, provides an unparalleled library of maturing, nascent single malt whisky as each farm’s barley is distilled, one per week throughout the year.
